Does anyone know why it takes the information at the top of the shortcut and adds it to the text message and Drafts?

You are passing that Text action output into the Choose from menu as an input. This is then passed on within the menu, and both of those queried actions accept text based input. Look at the data flow lines between the actions.
You can use the Nothing action to interrupt data flow.
