I have an appointment that occurs several times a week at different times based on the day. Anyone have any idea how to structure the shortcut so I can copy the title and location, but have a date picker for the time and date?

It’s not clear what you are trying to do.
Are you choosing an existing appointment on your calendar? If so, once you choose it, are you trying to edit the date and time to then create a second new calendar entry?
You describe it as a recurring appointment. How do the recurring dates and times play in to what you are trying to accomplish?
There are likely options to solve this, but your requirements aren’t clear.
