What do you want to dictate into specifically? Apps like Drafts for example can be triggered to do this via URL scheme or a keyboard shortcut in an action, Shortcuts can capture text through dictation, “Hey Siri” can trigger all sorts of things, including dictation direct to an Apple Note.
