Is there perhaps a way to access not only the battery of the iPhone, but also the battery consumption of the Apple Watch and Airpods?

Sadly no, not even with shortcuts.
You can run a shortcuts on the watch that reads the battery charge. But the watch can’t do automations of shortcuts so you would have to run it manually.
I mean, the obvious solution is that @simonbs has to extend Scriptable to work on the watch right? 
Although it would be super cool to be able to add scriptable complications to the watch.
