I’d like to calculate the time between a given date and today and have it displayed as eg. 3 weeks and 2 days. Get time between dates appears to be too limited. Any ideas?

Fortunately Shortcuts supports modular arithmetic, so it is just a case of working through whatever levels of granularity you want. I just went for years, weeks and days, but you could add in months, quarters, decades, etc.
Hopefully that’s enough to get you going.
